Use 5 to 6 grams of loose chamomile (about 1.5 teaspoons) per cup, or 2 tea bags instead of one.

Heat your water to around 90 to 95°C — not full boiling. Pour it over your chamomile and let it steep for exactly 3.5 minutes. Don’t go longer or it gets bitter.

Step 2 — Add Honey While It’s Still Hot

This is important. Add your honey while the tea is still hot because honey dissolves much better in warm liquid. If you add it after it cools down, it just sinks to the bottom and doesn’t mix properly.

Start with one teaspoon of honey per cup. Stir it in well. Taste it. If you want it sweeter, add a little more.

Step 3 — Let It Cool Down

Don’t pour hot tea straight onto ice — it melts all the ice instantly and you end up with watery tea.

Let the brewed tea sit for about 15 to 20 minutes at room temperature. Or if you’re in a hurry, put it in the fridge for 5 to 10 minutes.

It doesn’t have to be super cold yet — just not hot.

Step 4 — Pour Over Ice and Finish

Fill your glass with ice cubes. Pour the cooled chamomile honey tea over the ice slowly. Watch it turn into that beautiful golden colour — it looks so good.

Now the optional extras:

  • Squeeze in half a lemon — it adds brightness and balances the sweetness perfectly
  • Drop in a few fresh mint leaves — gives it a cool, refreshing feel
  • Add a lemon slice on the rim if you want it to look extra nice

What Does It Taste Like?

Okay so the flavour is really hard to describe but I’ll try. It’s floral and light — like drinking something from a garden. The honey makes it soft and naturally sweet without being heavy. The lemon adds a little zing. And the cold makes everything feel really clean and refreshing.

It doesn’t taste like medicine or like some weird health drink. It actually tastes really good. Even people who say they don’t like herbal tea usually enjoy this one because it’s so mild and pleasant.


Can You Make a Big Batch?

Yes! And I actually recommend it for UAE summers. Make a big jug and keep it in the fridge.

Here’s how:

  • Use 1 litre of water
  • Add 15 to 20 grams of chamomile (or 6 to 8 tea bags)
  • Heat the water to 90–95°C and steep for 3.5 minutes
  • Add 3 to 4 tablespoons of honey and stir well
  • Let it cool completely, then pour into a jug
  • Refrigerate for up to 2 days

Whenever you want a glass, just pour it over ice. Done. It’s honestly so convenient to have this ready in your fridge during summer.


Is It Good for You?

Honestly, yes. Here’s why this drink is a much better choice than most summer drinks:

No caffeine — You can drink it morning, afternoon, or night. No energy crashes later.

Natural sweetener — Honey is way better than refined sugar. It has antioxidants and is easier on your body.
